Ingredients:
- 1 tablespoon vegetable oil
- ¼ cup thinly sliced yellow onion
- 5 cups water
- 2 packages ramen noodles
- 1 cup shredded Napa cabbage
- ½ cup sliced leftover roast chicken or beef
- 2 green onions, chopped
- 5 fresh basil leaves, chopped, for garnish
- 5 fresh cilantro sprigs, chopped, for garnish
- 2 fresh chilies, chopped, for garnish
Directions:
Heat the oil in a pot over moderate heat. Add the onion and sauté until fragrant, about 1 minute. Add the water and bring to a boil. Add the seasoning packets that came with the noodles, or if you like, season with 1 tablespoon soy sauce and 1 teaspoon fish sauce. Add the noodles and cook until almost tender, about 2 minutes. Add the Napa cabbage and remove from heat.
Just before serving, divide the noodles between 2 very large soup bowls. Top with the meat and green onions and pour boiling broth over the noodles. Garnish with basil, cilantro, and chilies and serve immediately.
