Vietnam loves dau xanh—as a source of protein, steamed with both sweet and savory versions of sticky rice, in the parade of sweet coconut milk puddings and drinks enjoyed between meals, and as a component for banh chung, the banana leaf—wrapped rice cakes essential to a New Year feast. Dau means “bean” and xanh means “green,” the color of the little yellow bean’s hull.
