Papaya trees thrive in Vietnam. Their young, green fruit is appreciated as a cool, crunchy salad component, while the luscious, mature, orange-colored flesh is eaten as fruit. Look for ready-to-eat, peeled and shredded fresh green papaya in Asian markets. It makes Green Papaya Salad an almost instant dish. To prepare and shred a green papaya, peel half of it lengthwise (the white goo under the green skin is papain, a natural enzyme used in Asia for tenderizing meat). Cut it in half lengthwise, scoop out the seeds, and shred the peeled half on a box grater or in the food processor.
