The major kinds of dried rice noodles differ mostly in their width. You’ll find much variation in English-language nomenclature among various packages, but you needn’t rely on linguistic markers. Your eyes will tell you all you need to know. For example, the words “rice sticks” and “rice vermicelli” appear on noodles of many different widths. Since you can interchange one width for another in most of these recipes, you can’t really go wrong here. Just look through the cellophane wrapping and select the size you want. Here are the three basic sizes in which you will find dried rice noodles.
