Ingredients:
- 1 ½ pounds boneless pork, cut into 3-inch chunks
- 3 ½ cups coconut juice
- 3 tablespoons fish sauce
- 2 tablespoons Caramel Sauce or brown sugar
- 1 tablespoon finely chopped shallots or onion
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 hard-boiled eggs
- 3 green onions, cut into 2-inch lengths
Directions:
In a large, heavy saucepan, combine the pork, coconut juice, fish sauce, Caramel Sauce, shallots, salt, and pepper. Bring to a boil over medium-high heat, and then reduce the heat to maintain simmer. Cover and cook until the pork is tender and surrounded by a brown sauce, 45 to 50 minutes.
Add the eggs and green onions to the pan, and simmer for another 15 minutes, turning the eggs gently. Remove from the heat, take out the eggs, and halve them lengthwise. Carefully return the eggs to the sauce, transfer everything to a serving bowl, and serve hot or warm.
